We’ve made it clear to our adult children, most with kids of their own, that all we want from them for Mother’s and Father’s Day is a little bit of their time.  Our family loves breakfast and dislikes getting up early, so brunch is the perfect solution to time spent and food consumed.

Most recently, we’ve been trying to eat a little healthier, mostly due to doctor’s orders directed at the hubby, so no pork, little cheese and healthier carbs.

Our Menu:

Biscuits and Turkey Sausage Gravy

Fruit- Blueberries and Strawberries

Yogurt

Egg Cups

Banana Oat muffins with dark chocolate chucks

Banana Oat muffins with blueberries

Turkey Bacon

Biscuits and Gravy:

Again, I’m not a baker, so I use Bisquick TM for the biscuits

Gravy Ingredients:

2 packages turkey sausage links

2 cans low fat chicken broth

1/2 C Heavy Cream

1tsp. Xanthan Gum

Salt and Pepper to Taste

Directions:

1- Brown Turkey Sausage

Add Chicken Broth and Heavy Cream

Once mixture is warm, add Xanthan Gum and whisk togther

Bring to Boil.

Reduce to medium heat and continue stirring until desired consistency is met.

Banana Oat Muffins (Blueberry and Dark Chocolate)

Muffin Mix

Ingredients:

6 Cups Quick Oats

4 tsp baking powder

1 1/2 tsp cinnamon

1/4 tsp ground nutmeg

1 tsp salt

1/2 tsp honey

4 bananas-smashed and mashed

4 eggs

3 Cups Almond Milk- I prefer the low sugar 

Handful or a bit more of Dark Chocolate Chunks

Handful or a bit more of Blueberries

Directions:

1-Preheat 350 F

2-Either spray muffin tins 2 trays of 12-with cooking spray, or use baking cups (24)

3-In a large mixing bowl, blend dry ingredients- Oats, baking powder, nutmeg, Cinnamon, and salt

4-In medium mixing bowl, combine smashed bananas, honey, milk and eggs

5- Dump wet ingredients in to dry ingredients and mix well

6- Separate 1/2 of the mixture back to the other bowl

7- In one bowl throw in that handful of dark chocolate chunks and mix well

8- In the other bowl, throw in the handful of Blue berries and mix well

9- Place mixture evenly in baking cups or tins

10- Bake approx- 20 minutes

11- Allow to Cool

Egg Cups 

This is a stretch calling this a recipe, but my granddaughters, Evelyn and Lucy, told me that these were the best eggs ever…

Ingredients:

8 Eggs

A splash of heavy Cream

Sprinkle or either parmesan cheese or cheddar 

Salt 

Pepper

Baking Cups

Directions:

1-Mix all of the above ingredients with the exception of the baking cups together with a whisk.

2-Pour mixture in baking cups

3- Bake at 350 for 15-20 minutes

Display your brunch beautifully
