So Simple Keto Low-Carb Fudge
As I have stated before, cooking is not my specialty. I love sweets and Keto friendly fudge is right up my alley! Let me tell you this is a simple recipe that you don’t need to wait hours to eat. While the recipe is a great fudge recipe, it can be used as a chocolate sauce on top of Keto ice creams or other desserts. I cannot make these for my family alone or it will be a disaster because one minute the fudge will be there, the next it’s disappeared into my belly! These kinds of desserts are best for crowds unless you have self-control, which I wish I had.

Ingredients
1 ½ Cups Sugar Free Chocolate Chips or Chopped Baker’s Chocolate
1 Stick of Butter
8 oz Cream Cheese
¼ Cup Sweetener (stevia, erythritol, xylitol, or Swerve)
Pecans, optional
Instructions
In a saucepan over medium-low heat, melt chocolate and butter. Stir until combined and fully melted. In a bowl, beat cream cheese with an electric mixer until fluffy. Pour in melted mixture and continue to mix. Add sweetener and continue mixing until fully combined. Taste to see if it is sweet enough for your preference. Add more as needed. Pour mixture into a pan, add pecans if you like. Place pan in the freezer until firm. Cut into small pieces. Stores in the refrigerator for about a week and 2 months in the freezer.

Tip
If you have a sweet tooth and these are not quite sweet enough for your liking, you can add liquid stevia drops to the sweetness that you prefer.
